Delicious chicken and spring
vegetable medley 

Serves 4

Ingredients

  • 500g boneless chicken thighs

  • 100g pancetta, diced

  • 2 leeks, cleaned and sliced

  • 2 celery stalks, roughly chopped

  • 2 cloves garlic, minced

  • 2 tsp dried tarragon

  • 200g baby spinach

  • 2 Little Gem lettuces, quartered

  • 150ml cider

  • 200g peas (fresh or frozen)

  • 1 tbsp Dijon mustard

  • 100g grated cheese of your choice (e.g., feta or goat’s cheese)

Method

  1. In a large frying pan, cook the diced pancetta over medium heat until crispy. Remove it from the pan and set aside.

  2. In the same frying pan, add the chicken thighs. Cook until browned on both sides, about 5-7 minutes per side. Transfer the chicken to a plate.

  3. Add the leeks, celery, and garlic to the pan. Sauté until softened, about 3-4 minutes.

  4. Stir in the dried tarragon, baby spinach, and quartered Little Gem lettuces. Cook until the spinach has wilted.

  5. Pour in the cider and bring to a simmer. Add the chicken back to the pan along with the peas and Dijon mustard. Cover and let it cook for an additional 10 minutes or until the chicken is cooked through.

  6. Finish off with a sprinkle of your favourite cheese before serving.
